Quick and Easy Recipes during Quarantine

Falafel

Hey grad students! Looking for some new meal ideas? Here are a few quick and easy recipes from Adam of Mare Nostrum , that you can tryout this weekend!

Hummus

Ingredients

  • 1 cup dry chickpeas
  • 100 ml of vegetable oil
  • 170 g Tahini 
  • 19 g Salt 
  • 75 ml Lemon juice (to taste)
  • Garlic (optional) (to taste)

Directions

  1. Soak chickpeas overnight in a large bowl with 3 cups of water
  2. Next day drain chickpeas and boil with 25 g of baking soda. Boil for 2 hours or until chickpeas are very soft
  3. Drain and let cool in fridge
  4. Weigh out 1 kg of boiled chickpeas, place in food processor with oil and blend until paste like
  5. Add remaining ingredients and and blend until creamy consistency achieved

Falafel

Ingredients

  • 500 g of chickpeas
  •  Cilantro (bundle)
  • 100 g Garlic
  • 25 g Salt
  • 7 g Cumin
  • 7 g Coriander
  • 2 g Cayenne pepper
  • 12 g Falafel spices

Directions

  • 1. Soak chickpeas overnight in a large bowl with 3 cups of water
    2. Next day drain and wash the chickpeas
    3. Add chickpeas to food processor along with cilantro and garlic, blend until dough-like
    4. Add the remaining spices and blend again until thoroughly mixedWhen ready to fry
    1. Add 100 ml of water and ½ teaspoon of baking soda and mix with your hands to
    incorporate
    2. Using a small ice cream scoop form the patties of falafel
    3. Fry at 350 F for 6 – 8 minutes, enjoy with tahini
